Zucchini and caciotta fritters

Crispy on the outside and soft on the inside, with the fresh taste of caciotta cheese.

Ingredients
for 4 people
- 2 zucchini
- 150 g of fresh cow’s caciotta cheese
- 1 egg
- 50 g of flour
- 30 g of grated parmesan cheese
- Salt and pepper to taste.
- Oil for frying q.b.
Preparation
1.
Grate the zucchini and squeeze them well to remove excess water.

2.
In a bowl, mix the zucchini with the egg, flour, Parmesan cheese, diced caciotta, salt and pepper.


3.
Form pancakes with your hands and fry them in hot oil until golden brown.


4.
Drain them on paper towels and serve them warm!
