Tagliatelle with breech ragout and tomato sauce

A fresh pasta dish that celebrates the intense flavor of breech with a simple tomato ragout.

Ingredients
for 4 people
- 320 g fresh noodles
- 150 g of breech
- 400 g of peeled tomatoes
- 1 onion
- 1 clove of garlic
- 1 teaspoon of sugar
- Olive oil, salt and pepper
Preparation
1.
In a skillet, sauté the chopped onion and garlic with a drizzle of olive oil.

Add diced breech and let it brown for a few minutes.

Add the crushed peeled tomatoes, a teaspoon of sugar, and a pinch of salt and pepper. Cook over low heat for about 20 minutes, stirring occasionally.

Cook the noodles in plenty of salted water and drain.

Season the noodles with the breech ragout and tomato sauce and serve hot.
