Potato and caciotta croquettes

Simple to prepare, these croquettes are soft on the inside and crispy on the outside, with a stringy heart of caciotta cheese.

Ingredients
for 4 people
- 600 g of potatoes
- 150 g of fresh cow’s caciotta cheese
- 1 egg
- 50 g of breadcrumbs
- 30 g of grated parmesan cheese
- Salt and pepper to taste.
- Oil for frying q.b.
Preparation
1.
Boil the potatoes, peel and mash them with a fork.

Add the egg, Parmesan cheese, salt and pepper, mixing until smooth.


3.
Form balls or cylinders with the mixture and insert a piece of caciotta cheese in the center.


4.
Dip the croquettes in breadcrumbs and fry them in hot oil until golden brown.
5.
Serve immediately, crispy and stringy!
