A fresh and tasty first course with a nice contrast between creaminess and acidity.

Ingredients
for 4 people
- 320 g of pasta (preferably short pasta such as penne or fusilli)
- 200 g of fresh cow’s caciotta cheese
- 200 g of cherry tomatoes
- 1 clove of garlic
- Fresh basil to taste.
- Extra virgin olive oil q.b.
- Salt and pepper to taste.
Preparation
1.
Cook the pasta in plenty of salted water.

In a frying pan, sauté garlic with a drizzle of olive oil. Add the cherry tomatoes cut in half and cook for 5 minutes.

Drain the pasta al dente and add it to the pan with the cherry tomatoes.
4.
Cut the caciotta cheese into cubes and add it to the paste, stirring to melt it slightly.

5.
Add fresh basil, salt and pepper to taste. Serve hot.
