Pasta omelette with caciotta cheese and spinach

Ingredients
for 4 people
- 300 g of pasta (preferably leftover)
- 150 g of fresh cow’s caciotta cheese
- 200 g fresh spinach
- 4 eggs
- 1 onion
- Extra virgin olive oil q.b.
- Salt and pepper to taste.
Preparation
1.
Cook spinach in a skillet with a little oil and salt.

Beat eggs with salt and pepper, add finely chopped caciotta cheese.

In a skillet, sauté the chopped onion, then add the pasta and spinach.

Pour the beaten eggs into the skillet, stir, and cook over low heat for 5-7 minutes, until the omelet firms up.

Serve warm or hot!
