Parmesan Cheese Soufflé

A refined and very light appetizer.

Ingredients
for 4 people
- 40 g of butter
- 40 g of flour
- 250 ml of whole milk
- 100 g of grated Parmesan cheese
- 3 eggs
- Nutmeg, salt and pepper to taste.
Preparation
1.
Melt the butter in a small saucepan, add the flour, and stir until you get a golden roux.

Pour the milk in a trickle, stirring until a thick béchamel is obtained.

Add Parmesan cheese, salt, pepper and nutmeg.

Separate the yolks from the egg whites and incorporate the yolks into the warmed mixture.
5.
Whip the egg whites until stiff and gently add them to the mixture.
6.
Pour into buttered molds and bake in a static oven at 180°C (350°F) for 15 to 18 minutes without opening the oven.
