Omelette with cow’s cheese and zucchini

Ingredients
for 4 people
- 4 eggs
- 200 g of zucchini
- 100 g of fresh cow’s caciotta cheese
- 1 small onion
- Extra virgin olive oil q.b.
- Salt and pepper to taste.
Preparation
1.
Grate the zucchini and chop the onion.

In a skillet, sauté the onion with a little oil, then add the zucchini and cook for a few minutes.

Beat the eggs with salt and pepper, add the diced caciotta and mix.

4.
Pour the eggs into the pan with the zucchini and cook over low heat until the omelet is golden brown on both sides.
5.
Serve warm or lukewarm.
