Carpaccio of breech with parmesan cheese and arugula

A simple but refined appetizer, with the breech as the star.

Ingredients
for 4 people
- 150 g of breech
- 50 g parmesan cheese (in flakes)
- 50 g of fresh arugula
- Extra virgin olive oil
- Balsamic vinegar (optional)
- Black pepper
Preparation
1.
Arrange the breech slices on a serving plate.


2.
Add parmesan shavings and some arugula.


3.
Season with olive oil, a pinch of pepper and, if you like, a drizzle of balsamic vinegar.


4.
Serve immediately, perhaps accompanied by good homemade bread.
