Caciotta cheese and berry mousse

A light, velvety mousse with the sweet contrast of berries.

Ingredients
for 4 people
- 200 g of fresh cow’s caciotta cheese
- 100 ml fresh cream
- 50 g of sugar
- 1 teaspoon vanilla
- 100 g fresh or frozen berries
- 2 tablespoons of sugar (for the coulis)
Preparation
1.
In a small saucepan, heat the cream with the sugar and vanilla until hot, but without boiling it.

Blend the caciotta with an immersion blender and add the hot cream, blending until smooth and creamy.

Let the cream cool in the refrigerator for about 2 hours.

Meanwhile, prepare the berry coulis by blending the berries with sugar and straining to remove the seeds.
5.
Serve the mousse in small cups, garnishing with the berry coulis.
