Ingredients
for 2 people
- 200 g of beef tenderloin
- 50 g of Parmigiano Reggiano flakes
- 1 tablespoon truffle oil
- 1 egg yolk
- 1 tablespoon Dijon mustard
- Salt and pepper to taste.
Preparation
1.
Finely chop the beef tenderloin with a knife.

Season with truffle oil, mustard, salt and pepper.

Arrange the tartare in a ramekin, add Parmesan shavings and an egg yolk in the center.


4.
Serve with toasted bread croutons.
